Carrot Cake Waffles
Recipe courtesy of Waffle Iron Genius Recipe Book
Beat together:
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs
In a separate bowl, stir together:
- 2 cups flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
-
½ teaspoon salt
Stir in and mix until well blended:
- egg mixture
- 2 cups grated carrots
Preheat and grease your waffle iron. Add batter to your iron, close the lid and cook until golden brown.
Remove waffle from iron and place on wire rack to cool. Repeat until batter is used up.
Stir together:
- Cream Cheese Rrosting (use your own recipe, store bought, or see our recipe below)
- chopped pecans (to taste)
To Serve
Spread frosting over one waffle and top with a second waffle to make a sandwich.
Top with a dollop of whipped cream or extra frosting with a sprinkling of pecans. Enjoy.

Using a hand mixer, beat on high until light and fluffy. If icing is too thick you can thin it by adding milk.
