Chocolate Ice Cream Pie
In a microwave safe bowl, melt:

Stir in:

1½ cups Oreo crumbs

1/3 cup icing sugar
Return bowl to microwave and cook on medium-high heat for 2 minutes, stirring twice. Press hot crumbs into a greased 9” x 13” cake pan or a 9” springform pan. Set aside and allow to cool.
In another bowl, whip together until stiff:

1 4oz. box instant chocolate pudding powder

2oz. (half a box) instant vanilla pudding powder

1 ½ cups heavy whipping cream (can substitute 1 cup Nutriwhip)

¼ cup strong coffee, cooled (or 1 teaspoon instant coffee in ¼ cup water)

⅛ cup rum
Stir in:

1 quart vanilla ice cream, melted (but cold)

¼ cup plain yogurt (optional)

¼ cup grated or shaved chocolate
Pour onto crumb base and freeze for at least 24 hours.
Bring out of the freezer about 20 minutes before serving.
Garnish with chocolate shavings, whipped cream, etc. as desired.
