Country Lane Kitchens' Superb Chocolate Cake
Serves 36
This recipe makes 2 – 9” x 13” cakes, 2 – 10 cup Bundt cakes, or 1 large slab cake using the Nordic Ware High Sided Cake Pan #50540-F
Cream together and set aside:

- 3 cups white sugar
- 1 cup oil
- 1 cup cocoa
- 4 eggs
- 2 ½ - 3 teaspoons vanilla extract
Blend together:
- 4 ½ cups flour
- 2 ½ teaspoons baking soda
- 2 ½ teaspoons baking powder
- 1 ½ teaspoons salt
Measure:
To your creamed mixture, alternately add the dry ingredients and water until thoroughly blended.
Pour cake batter into well greased and floured pans (2 - 9” x 13” cake pans, or 2 – 10 cup Bundt cake pans, or 1 large slab cake using the Nordic Ware High Sided Cake Pan #50540-F). Run a knife through the batter or tap pan on a flat surface to release air bubbles.
Bake at 350°F (176°C) for approximately 20 – 35 minutes. Baking time will vary depending on which pans you are using. Monitor cake(s) closely and remove them from the oven when batter has set in the middle and a cake tester comes away clean.
Topping Options – Both the cake and these toppings freeze well.
German Chocolate Cake Topping
Stir together:
- 2 ½ cups very lightly packed brown sugar
- 1 cup margarine, softened
Add and stir together well:
- 3 ¾ cups sweet flaked or long coconut
- ¾ cup milk
Spread the topping over the entire cake(s) when removed from the oven. Place the cake(s) under the broiler for 3 – 4 minutes or until the topping is bubbly. Watch closely.
Pudding and Cream Topping (serve cold)
In a chilled bowl, add:
- 2 envelopes whipped topping mix (Dream Whip)
- 2 110gm packages of instant chocolate pudding powder
- 3 cups cold milk
- Almond or Mint flavouring extract if desired
Using your mixer, beat on high speed for 3 – 8 minutes until thick and stiff. Spread on the cooled cake and chill.
